120g chicken or 170g tofu - (Uncooked weight)

9g Coconut oil
30g (dry weight) Quinoa
Grated Ginger root

Preparation
Steps
Cook the quinoa separately and drain
Chop and fry the veggies in a pan with coconut oil, chopped garlic and grated ginger
Once the vegetables have softened add in the chicken or tofu with the soy sauce and lime juice
When the mince is fully cooked mix in the quinoa and stir it all together
