Shred Curry and Cheesy Naan

Ingredients

Great weekend option where you may want a bigger meal in the evening that feels like a treat!


Male

  • 45g Rice (dry weight)

  • 1/2 Can light coconut milk

  • 1x small onion

  • 2x chicken stock cubes

  • 1x Tinned tomatoes

  • 300g Chicken (cooked weight)

  • Tikka JD seasonings

  • 1tsp Garlic, cumin and corrinader

  • 1x Wholewheat pitta

  • 9g Grass fed butter / olive oil spread

  • Garlic

  • 50g Low fat mozzarella


Female

  • 30g Rice (dry weight)

  • 1/4 Can light coconut milk

  • 1x small onion

  • 2x chicken stock cubes

  • 1x Tinned tomatoes

  • 200g Chicken (cooked weight)

  • Tikka JD seasonings

  • 1tsp Garlic, cumin and corrinader

  • 1x Wholewheat pitta

  • 6g Grass fed butter / olive oil spread

  • Garlic

  • 25g Low fat mozzarella

Preparation

Steps


  1. Cook and drain the rice

  2. Dice the onion and add to the pan with the chicken

  3. Chuck your sauces/spices in and cook until everything is ready

  4. Top the pitta with butter, garlic and chopped mozzarella, pop in the oven for a few minutes
