4 servings of Chicken (600g cooked weight) or Tofu (880g cooked weight)
1 tsp Coconut oil
1 Tin light coconut milk
Vegetables of choice (peppers, onions, corgette, aubergine, mangetout)
Rice

1 tsp Coconut oil
1 Tin light coconut milk
Vegetables of choice (peppers, onions, corgette, aubergine, mangetout)

Steps
Cook the rice separately and drain
Heat coconut oil in a large Wok, add curry paste and cook for 1 minute
Add some grated ginger if desired, add coconut milk and bring to a boil
Add chicken or tofu and veggies, simmer until all cooked
