Thai Red or Green Curry

Ingredients

Male

  • Red or Green thai paste – 1 tbsp – add more to taste if required

  • 4 servings of Chicken (600g cooked weight) or Tofu (880g cooked weight)

  • 1 tsp Coconut oil

  • 1 Tin light coconut milk

  • Vegetables of choice (peppers, onions, corgette, aubergine, mangetout)

  • Rice


Female

  • Red or Green thai paste – 1 tbsp – add more to taste if required

  • 4 servings of Chicken (400g cooked weight) or Tofu (680g cooked weight)

  • 1 tsp Coconut oil

  • 1 Tin light coconut milk

  • Vegetables of choice (peppers, onions, corgette, aubergine, mangetout)

  • Rice

Preparation

Steps


  1. Cook the rice separately and drain

  2. Heat coconut oil in a large Wok, add curry paste and cook for 1 minute

  3. Add some grated ginger if desired, add coconut milk and bring to a boil

  4. Add chicken or tofu and veggies, simmer until all cooked
